Do you want to create a vegetable patch? After the essentials of the vegetable garden which are the tomato, the salad, the radishes, the zucchini, the red beet and the leek (see our file), here are vegetables slightly more full-bodied to cultivate! Green beans, potatoes, eggplant, artichokes, pumpkins, peppers can be fun, but require space, and sometimes investment.
With fillets (therefore with long pods), oars (for climbing varieties), snap, extrafine, green, white, grain ... The name 'bean' hides many varied flavors; choose the variety you prefer on the plate to want to carry out their culture! The beans are sown in the spring, in the sun, when the earth is warmed up and the temperatures finally exceed 15 ° C, generally during the month of May; ideally place them under chassis until September. The specialists (see the "Acknowledgments" at the end of the article) advise to sow them "in poquet": this method consists in making a hole in the ground with your finger or with the dibble every 30 cm then putting 3 to 4 seeds in it . Repeat this once or twice a season to continue eating fresh beans regularly, but also cut them lightly when the plants reach 20 cm in height to prevent them from tearing off when picked. And pay attention to their watering, which should be enough in July and August for good growth. Finally, so as not to have to bend down to pick them up when they are ready to pick, opt for the beans, which you will support to support them and make your work easier. Once harvested (from June to October depending on the region), beans are very interesting thanks to their numerous storage and tasting possibilities: fresh, canned, frozen ... If you have a large garden and you are passionate about your 'home made' vegetable garden, then you can get started in the cultivation of potatoes, which require surface area and presence (so avoid in a vegetable patch). There are more than 3000 varieties of potatoes! Among the 100 varieties produced in France, define in advance the one (s), once again, whose taste (and recipes) you prefer. The tubers are on sale in stores from February but be aware that they should not be planted until April, especially since it is better to wait until the last frosts have passed. Take the time to prepare the planting of the tubers (claw and clean the soil, spread a fertilizer, etc.). The potato benefits greatly from crop rotation, which itself is good for the soil as it provides a quality amendment. When the sweetness returns after winter, plant them deeply (at least 15 cm deep), spacing the plants about 35 cm and the rows by 65 cm, then cover with a thin layer of soil. Also avoid excess water (risk of mildew). The technical gesture to know is to "butter" the potatoes as they germinate. Raise the earth at the foot of the plant to make a mound, which allows it to draw all the necessary resources from the soil, and therefore to promote a good yield. Finally, to harvest it, you will have to dig and bend down ... those who like to put their hands in the ground will appreciate, but it is a task that requires motivation! The reward: beautiful potatoes direct from the vegetable patch from June to October. Store them in a dry place away from light while waiting to consume them. Because there are certainly as many potato recipes as there are varieties! Mashed potatoes, gratins, fries, sautéed potatoes, in the oven or in a salad, mince, crisps, soups ... Potatoes are one of the most nourishing "starchy vegetables" (85 kcalories per 100 g and less than 80% of water (18% starch), rich in vitamin C and minerals (potassium, magnesium, phosphorus, iron), but also in fibers. Prepare it with water or steam light version but feast by preparing it with vegetables (mashed for example) and at your convenience!
If you already have tomatoes and zucchini in your vegetable patch, why not add eggplant ... to prepare delicious ratatouille? You can also plant them next to each other, or next to the beans. Also note that eggplants grow well in pots, so they can be decorative since there are purple, white or even yellow varieties. The eggplant needs a rich soil, as well as heat and lots of sun, it is a southern vegetable. As with zucchini, prefer grafted plans that will be more productive, and do not choose more than two feet for a family of four. An average plant produces around twenty eggplants. As with any other vegetable, always plant after the frosts in May (and wait until June if it is still too cool), spacing your plants 50 cm apart. Only water their feet copiously, not the leaves, to prevent the plant from being damaged by mildew. Thick mulching of the foot will also be beneficial. The eggplant will also teach you patience, since you can eat it between July and October. Cooked or raw, marry it with other seasonal vegetables (tomato, zucchini ...) but also why not with white rice, a delight! Or caviar… With only 18 kcalories per 100 g, it contains more than 90% water. It is loaded with vitamins, antioxidants, potassium and fiber. Mashed, ratatouille or moussaka, baked, stuffed or in a pan, the eggplant is full of flavor.
As aesthetic as it is gourmet, the artichoke is an original vegetable to grow in your vegetable patch. This green or purple multi-year plant will produce for three to four years and will then need to be replanted. It is its bud which is consumable, and a foot gives 5 to 10 artichokes per year. The first year, do not worry if the plant produces nothing, it's normal! The following years will certainly be more greedy; just remember to protect the plants well against frost so that they overwinter. Simple to cultivate (in sowing as in plantation), the artichoke requires above all space (approximately 1 m² per foot) because its foliage is luxuriant. It needs a sunny place and a light but sufficiently amended soil. You can taste the artichokes between May and August, cooked or raw, as a starter simply seasoned with vegetable oil or mashed. The artichoke is rich in vitamins B and C like the majority of vegetables, but also in copper and minerals, and it is very beneficial for the liver. Finally, it has only 40 kcalories per 100 g. And if production is really important, the trend today is also to include it in your floral arrangements, in the center of the table or in a bouquet to offer! You can even let it bloom, but it will no longer be consumable - or in any case less tender.
In the squash family, pumpkin is a nice, playful and spectacular vegetable. Its very easy cultivation appeals to parents and children alike - provided that the seeds are sown in pots and warm, at least at 16 ° C… The ideal temperature is 25 ° C! The first plants can be made in May and June, and the reward is quite fast: the pumpkin grows in a few weeks under the effect of the sun's rays! It therefore needs a large amount of organic matter to feed itself and a very rich soil. The trick: as the pumpkin is a creeping plant, when it reaches the size of a melon, place a plank or brick underneath to isolate it from the ground and prevent it from rotting after watering. In addition, do not hesitate to prune your pumpkins so that they do not invade the vegetable patch and that their production is of quality. At the end of summer, you can pick these sun-drenched cucurbits to taste them even until Christmas - provided you harvest the last before the coldest days and store them dry indoors. It is up to you to choose if you will cut them for Halloween, or if you will taste them in delicious velouté and other vegetable pies! Pumpkin is low in calories and rich in beta-carotene, vitamins A, B, C and E, as well as potassium, phosphorus and magnesium.
Pepper… or chili
Finally, instead of offering you the traditional carrot, slow to germinate and happy only in sandy soil (therefore not really easy to cultivate for the budding gardener), we prefer to recommend the pepper, or even the chilli - they are part of the same family. Perfect alongside the tomato and eggplant, they are very decorative - red, green, orange or yellow! Plant them in soil enriched with organic matter and help them with a 50 to 60 cm stake. As with zucchini and eggplant, specialists advise choosing grafted plants for better yield. Peppers and peppers also contain vitamin C (whatever their color) and E in quantity, as well as potassium; green pepper is an excellent source of vitamin B9. If you have trouble digesting them, you can seed them, peel them and cook them so that you can enjoy them again. For example stuffed, or ratatouille, and even salad ... enjoy!
In general in your vegetable garden, prepare your soil well before planting any vegetable. Hoe it and enrich it with organic matter.
